To organize a fridge, I'd give each kind of food a fixed spot, chosen by how cold that spot runs and what happens if the food drips. Ready-to-eat food and leftovers go up top, dairy and eggs in the middle, and raw meat sealed on the bottom shelf. Fruit gets one crisper drawer, vegetables the other, and condiments ride in the door.
Fridge organization is the habit of keeping each food in the same zone every time, sorted by temperature and drip risk. The rules here come from Health Canada, the makers' Canadian support pages and university food scientists, and where they disagree I say so.
I'm Michael Ruhr, and I work at Merit Home Furniture in Duncan, which no longer carries appliances. The fridges named here are listed for our Campbell River and Port Alberni stores on Vancouver Island, alongside the other kitchen appliances we sell there.
There's a money side too. Love Food Hate Waste Canada puts the average household's wasted food at 140 kilograms a year, costing more than $1,300. Vegetables, fruit and leftovers top that list, and they're exactly what a messy fridge hides.
How to organize a fridge, shelf by shelf
Fridge organization starts from one Health Canada rule. Raw meat, poultry, fish and seafood sit sealed on the bottom shelf, where their juices can't drip onto anything else. Every other zone is arranged around it.
| Zone | What goes there |
|---|---|
| Top shelf | Leftovers, drinks and ready-to-eat food such as yogurt, hummus and washed berries |
| Middle shelves | Milk, eggs in their carton, butter, opened jars that need the steady cold |
| Bottom shelf | Raw meat, poultry, fish and seafood, sealed, ideally in a tray with a lip |
| Crisper drawers | Vegetables in one, fruit in the other, each on its own humidity setting |
| Deli drawer | Cheese, sliced meats and opened packages |
| Door bins | Condiments, sauces, juice and bottled water: foods that cope with the door swinging open |
Starting from empty, I'd load it in this order, because the bottom shelf and the drawers decide where everything else can go.
- Empty it and wipe it. Throw away what's spoiled and wipe the shelves. A full clean of drawers and coils is a separate job.
- Move the shelves first. Set adjustable shelves for your tallest bottle before any food goes back in.
- Bottom shelf next. Raw meat goes in a sealed container or a rimmed tray, never loose on the glass.
- Fill the crispers. Vegetables on high humidity, fruit on low.
- Leftovers on top, dated. Health Canada's leftovers page suggests writing the date on each container.
What belongs in the fridge door?
The fridge door is the spot whose temperature moves the most, because it swings out into the kitchen every time someone opens it. Condiments, sauces and juice handle that well. Egg Farmers of Canada asks for eggs to stay out of the door for that reason, in their carton on a shelf in the main compartment.
How do you organize a fridge for food safety?
Organizing a fridge for food safety rests on three Health Canada figures. The fridge runs at 4 °C (40 °F) or lower and the freezer at -18 °C (0 °F) or lower. The band between 4 °C and 60 °C is what Health Canada calls the danger zone, where bacteria multiply fast. Cooked food that has sat out at room temperature for more than two hours goes in the garbage.
Layout helps with all three. Health Canada's leftovers page asks for hot food to go into shallow containers, left uncovered until it cools. It also warns against overstocking, so cold air can still circulate. If lettuce comes out frozen at the back, the usual reasons food freezes in a fridge are worth checking.
On how long leftovers last, Health Canada's two pages don't quite agree. Its leftovers page says to eat them within 2 to 3 days. Its storage chart allows 3 to 4 days for cooked meat, stews and egg or vegetable dishes. I'd go by the shorter number. Health Canada says seniors, pregnant women and people with weakened immune systems are at an increased risk for food poisoning. A doctor, or a HealthLink BC nurse at 8-1-1, can say which foods to skip.
| Food | Health Canada fridge time at 4 °C or lower |
|---|---|
| Ground meat | 1 to 2 days |
| Fresh beef, pork or lamb | 2 to 4 days |
| Whole chicken or turkey | 2 to 3 days |
| Eggs in the shell | 3 to 4 weeks |
| Opened milk | 3 days |
| Leaf lettuce | 3 to 7 days |
| Carrots or celery | 2 weeks |
Setting the fridge crisper drawers for fruit and vegetables
A crisper drawer's humidity slider opens or closes a small vent. High humidity keeps the vent shut and holds moisture in, while low lets some air escape. Frigidaire Canada's owner centre puts leafy vegetables on HIGH, or in a drawer with no control at all. Fruit and non-leafy vegetables still in their skins go on LOW.
Samsung Canada's support page gives longer lists.
| Setting | Samsung Canada's examples |
|---|---|
| High humidity | Broccoli, Brussels sprouts, lettuce, cucumbers, peppers, carrots, strawberries, herbs |
| Low humidity | Apples, pears, mangoes, papayas, cantaloupes, avocados |
Samsung also suggests running one drawer on high and the other on low, rather than sliding the control every week. Some drawers manage themselves: the Frigidaire Gallery French door in the table further down has two crispers with automatic humidity control.
Which fruits give off ethylene in the fridge?
Ethylene is a gas that ripening fruit gives off, and it speeds up ripening and decay in produce nearby. In a 1998 Penn State release, postharvest physiologist Kathleen Brown names apples and pears as big producers. Bananas, peppers and tomatoes give it off only once fully ripe.
The sensitive side is mostly vegetables. Penn State's vegetable scientist Peter Ferretti says carrots and parsnips turn bitter, and broccoli, cabbage, lettuce and spinach go yellow and limp. His fix is to roll sensitive produce in paper bags in one crisper and bag the producers in the other.
A University of California guide by Adel Kader and colleagues also gives fruit and vegetables a drawer each. It suggests perforated bags, or about 20 pin holes in a medium plain bag. Some produce does worse cold: bananas blacken, and watermelon loses flavour after more than 3 days in the fridge. Health Canada's chart says not to refrigerate tomatoes.
Where cheese goes in the fridge, and how to wrap it
Cheese keeps longest wrapped snugly, on a lower shelf or in a drawer, away from anything with a strong smell. That's the advice Alberta Milk passes on from Dairy Farmers of Canada's Dairy Goodness site. Wrapped tight, it says, cheese is fine in the vegetable drawer. Love Food Hate Waste Canada suggests the deli drawer instead, with the fridge between 0 and 4 °C.
Fresh cheeses skip the wrap. Feta and bocconcini stay in their brine, and cream cheese and ricotta stay in their own sealed tubs. Health Canada's chart gives soft cheese 1 week in the fridge and firm cheese 5 weeks.
Mould is where the types split. On a firm or hard cheese, Alberta Milk's advice is to cut off at least 1 centimetre around the spot and rewrap the rest. Soft or fresh cheese with unwanted mould gets thrown out. For a big block, it suggests freezing pieces of 500 g or less for up to two months, then cooking with them.
How to organize a small fridge
A small fridge gets the same order as a big one, squeezed into fewer zones. Compact and bar fridges often have wire shelves and a single crisper. A rimmed tray under raw meat keeps drips from falling through the wire. With one crisper, Penn State's paper-bag trick keeps fruit and vegetables apart inside it.
Clear bins do the work drawers do in a bigger fridge, one for snacks and one for sauces, each sliding out whole. Square containers stack better than round ones, and shallow ones cool leftovers faster.
The Danby Designer compact fridge has two full-width wire shelves and one half-width, a covered vegetable crisper and a CanStor can dispenser. Merit lists it for Campbell River and Port Alberni at $289.99 to $369.99 before applicable taxes. The Epic retro compact has its own freezer section at -18 °C, glass shelves and one clear crisper, at $549.00 at Campbell River.
Organizing a top-freezer or one-door fridge
A top-freezer fridge keeps the freezer behind its own door above, so the fridge below follows the same shelf map. A one-door all-fridge has no freezer at all, which frees the top shelf for leftovers. The Frigidaire top-freezer apartment fridge has three glass shelves, two of them adjustable, and two humidity-controlled crispers. It's listed for both stores at $799.00 to $829.00. Those two stores carry 12 compact fridges, all in the compact refrigerator collection.
French door fridge organization, and the drawers on our listings
A French door fridge organizes the same way, with more drawers to assign. The wide shelves take platters, the bins on both doors split condiments from drinks, and a middle drawer holds deli food or snacks. Half-width shelves let a tall bottle stand on one side.
Of the 390 refrigerators on Merit's site, 126 list Campbell River, Port Alberni or both. Five of them are below. Prices are Merit's, before applicable taxes, read on November 1, 2026.
| Fridge | Shelves and drawers | Store, price |
|---|---|---|
| Frigidaire Gallery French door | 2 crispers with automatic humidity control, a deli drawer, 6 adjustable gallon door bins | Campbell River and Port Alberni, $1,899.00 |
| Whirlpool French door | Pantry drawer, gallon door bins, full-width and half-width glass shelves | Campbell River and Port Alberni, $2,099.99 |
| Samsung French door with Beverage Center | Spill-proof tempered glass shelves, gallon door bins, an inside Beverage Center with an autofill pitcher | Port Alberni, $2,199.99 |
| LG French 4-door | Full-Convert Drawer set to -1, 1, 3 or 5 °C, or run as a freezer | Port Alberni, $2,799.99 |
| Amana bottom-freezer | 1 fixed full-width and 4 adjustable half-width spill-proof glass shelves, humidity-controlled crispers | Campbell River and Port Alberni, $1,549.99 to $1,599.99 |
Spill-proof shelves have a raised edge, which matters most under the raw meat. When cans crowd the fridge, a separate drinks unit is the other answer. A wine cooler and a beverage centre differ mainly in how cold each runs. To compare the lot, every fridge Merit lists is in one collection.
Where fridge organizing goes wrong, and the food it wastes
Fridge organizing goes wrong in a few predictable ways. Raw meat ends up on a top shelf because it fit there, and fruit and vegetables share a drawer. Leftovers go in undated, and the fridge gets packed so tight the air stops moving.
Love Food Hate Waste Canada, using National Zero Waste Council research, says 63% of the food Canadian households throw away could have been eaten. Its breakdown by weight lines up with the fridge.
| Food | Share of Canada's household food waste |
|---|---|
| Vegetables | 30% |
| Fruit | 15% |
| Leftovers | 13% |
| Bread and bakery | 9% |
| Dairy and eggs | 7% |
Here in the valley, the Cowichan Valley Regional District's 2015 food waste study found avoidable food made up 24% of garbage totes in homes without curbside organics. In homes with organics pickup, it was 12% of the garbage. For what does spoil, the CVRD asks for produce stickers to come off first, since they're plastic.
Holiday meals strain a fridge more than any other week. A whole turkey gets 2 to 3 days in the fridge by Health Canada's chart, so I'd clear the bottom shelf for it before the groceries come home.

Opening fridge drawers in Campbell River or Port Alberni
Shelf layout is the one thing a spec sheet describes badly, so it's worth seeing a fridge with its doors open. A call ahead tells you which of these is set up at our Campbell River store on Homewood Road or our Port Alberni store on Third Avenue. Nobody will hover while you pull drawers in and out.
I can't confirm appliance delivery terms for those stores, so ask when you call. The other 264 refrigerators on our site are special orders with no store listed, and their pages give the special-order line, (250) 746-5527. The towns each Merit showroom serves are mapped out, and the same two stores carry our Silhouette wine coolers.
Phone Port Alberni at (250) 724-6644 or Campbell River at (250) 286-0868.
Every fridge, range and laundry guide we've written sits together on one page.
