Freezer organization for chest, upright and fridge freezers, with storage times

Maytag 16 cu. ft. chest freezer in glacier grey with the lid closed - Merit Home Furniture

For freezer organization, my rule is to sort food into bins by type, freeze it flat and airtight, and label every package with what it is and the date. Health Canada advises running the freezer at -18°C (0°F) or colder. Done that way, the oldest packages get eaten first and nothing is lost at the bottom.

Freezer organization is the way food is wrapped, grouped, labelled and placed in a freezer. I write these guides for Merit Home Furniture on Vancouver Island. Merit's freezers and fridges, part of what we stock in appliances, are carried at our Campbell River and Port Alberni stores. The basket and shelf counts below come from those live listings and the makers' manuals. Whether to buy a chest or an upright is a separate question; here I start from the freezer you have.

How do I organize a freezer from scratch?

Organizing a freezer from scratch takes an afternoon and a cooler or two. These are the steps in the order I'd take them.

  1. Empty it. HealthLink BC says food that thawed and stayed above 4°C for more than 2 hours should be thrown out, not refrozen.
  2. Defrost if needed. Danby's manual for its 10 cu. ft. chest asks for a defrost twice a year, or when about a 1/4 inch layer of frost has built up.
  3. Sort into groups. Raw meat, fish, cooked meals, vegetables and fruit, baking, then odds and ends. Each group gets one basket, bin or shelf.
  4. Measure, then buy bins. Take the inside width, depth and height, and the gap between shelves.
  5. Label and load. Oldest food goes at the front or on top, and a list taped to the lid or door gets crossed off as things come out.

Chest freezer organization: baskets, bins and layers

Chest freezer organization works in layers. Big, slow-to-use items go on the floor, sorted bins in the middle, and small things used weekly in the hanging baskets. A chest freezer, often called a deep freezer, opens from the top, so whatever sits lowest is hardest to see. Whether a chest or an upright suits you better comes down to running cost, floor space and your back.

Merit's chest freezer listings show how much sorting each model does for you. Prices were read November 1, 2026, before applicable taxes.

Chest freezer Baskets inside Price and store
Frigidaire 15 cu. ft. 2 removable baskets $899.00, Campbell River and Port Alberni
Frigidaire 20 cu. ft. 2 removable baskets $1,099.00, Campbell River and Port Alberni
Maytag 16 cu. ft. 3 slide-out baskets and a separator $1,199.99, Campbell River
Marathon Deluxe 14 cu. ft. 4 wire baskets in two rows $949.00, Port Alberni
Whirlpool 19 cu. ft. 4 storage baskets $1,399.99, special order

Maytag's listing says its separator divides the freezer into areas and doubles as a drip tray.

Chest freezer organization ideas for the bottom layer

Under the baskets, I'd use open bins or reusable bags with handles, one per food group, labelled on the end that faces up. Flat-frozen bags stand on edge like files. Staggering bins of two heights lets the lower one show, and a hand-wide gap lets you tip a bin out. Bags beat boxes here, since a bag shrinks as it empties and a box doesn't.

How to organize a stand-up freezer: shelves, door bins and vents

An upright freezer is organized by shelf. Give each food group a shelf, put small packages in the door bins, and keep everything off the vents. Merit's uprights come with glass or wire shelves.

Upright freezer Inside Price and store
Frigidaire 13 cu. ft. 4 adjustable glass shelves, 5 door bins $749.00, Campbell River and Port Alberni
Danby 14 cu. ft. 4 glass shelves, 1 crisper drawer, 4 door shelves $859.99, Campbell River and Port Alberni
Amana 16 cu. ft. 3 adjustable full-width wire shelves, 5 fixed door bins $1,099.99, Port Alberni

Amana's manual for that 16 cu. ft. upright shows cold air entering from the freezer wall and returning through a vent near the bottom. It says food packages must not block those vents, or temperature and moisture problems may follow. Frigidaire's upright guide adds that foil or paper towel liners interfere with cold air circulation.

Is it better to have wire or glass shelves in a freezer?

Glass shelves hold small packages and catch drips, while wire lets you see the shelf below. Neither listing claims one keeps food colder. For a freezer of small bags I'd pick glass, since nothing tips through. On wire, a flat-bottomed bin per shelf does the same job.

Fridge freezer organization: top, bottom drawer, side-by-side and French door

Fridge freezer organization starts with the door, and the door depends on the refrigerator type. Top freezers and side-by-sides swing open onto shelves; bottom freezers and most French door fridges pull out as a drawer. All five below list Campbell River and Port Alberni, priced before applicable taxes.

Amana 29 inch stainless bottom-freezer refrigerator with its pull-out freezer drawer - Merit Home Furniture
Layout and model Freezer section Price
Top freezer: Frigidaire 30 in. One full-width glass freezer shelf $779.00
Bottom freezer: Amana 29 in. Pull-out drawer, glide-out wire basket with a QuickSplit organizer $1,549.99 to $1,599.99
Side-by-side: Whirlpool 33 in. A tall freezer column behind its own door $1,749.99 to $1,799.99
French door: Whirlpool 36 in. Pull-out drawer with a Pizza Pocket $2,099.99
Four-door: Frigidaire Gallery 36 in. Freezer drawer plus a middle drawer that sets from -6 to 45°F $2,799.00 to $2,899.00

A top freezer is a short, wide box split by one shelf, so I'd stand flat bags in a slim bin on one side and keep boxes on the other. A side-by-side is tall and narrow, where narrow pull-out bins work better than wide ones. On the fridge side, organizing the fridge shelf by shelf follows a different order, crispers included.

Drawer freezer organization for bottom and French door fridges

A freezer drawer is a small chest freezer that rolls toward you. Small things go in the upper basket, and the deep part is filed upright, bags on edge and labels facing up. Whirlpool's Pizza Pocket stands frozen pizzas on end. The Frigidaire Gallery's middle drawer switches between fridge and freezer, which makes it overflow space after a big shop.

Freezer organization ideas: flat, portioned and wrapped tight

The freezer organization ideas that save the most space come down to package shape. North Dakota State University (NDSU) Extension says food about 2 inches thick should freeze completely in about two hours. It asks for new packages in one layer, stacked only once frozen solid, because slow freezing makes large ice crystals.

NDSU also suggests repackaging family packs into smaller amounts. I'd split ground beef or chicken thighs into one bag per meal, and freeze soup as single lunches and family dinners. Matching clear bins or one size of freezer bag stack neatly and show what's left. Garden vegetables go in the same flat way, once they've been blanched and cooled.

Freezer burn and packaging

Freezer burn is frozen food drying out. NDSU describes grayish-brown leathery spots caused by air reaching the food, a quality problem rather than a safety one, and mild spots can be cut away. Meat or poultry can go in still in its supermarket wrap, it says, but only if it will be used within a month. For longer, overwrap in heavy-duty foil or freezer paper, or put the package inside a plastic freezer bag. Frigidaire wants containers dry going in, since moisture becomes frost.

Labelling, dating and freezer storage times at -18°C

Every package needs what it is and the date it went in. Health Canada's leftovers page says to date leftovers so you can identify them and avoid storing them too long. I'd add the servings, since "chili, 2 servings" tells you more than "chili".

Health Canada says its freezing times are for quality, and properly wrapped food may hold its quality longer. This freezer organization chart comes from its table.

Food Freezer at -18°C
Fresh beef 10 to 12 months
Fresh pork 8 to 12 months
Ground meat 2 to 3 months
Whole chicken or turkey 1 year
Chicken pieces, or lean fish such as cod 6 months
Fatty fish, such as salmon 2 months
Bacon 1 month
Cooked meat and stews 2 to 3 months
Soups 4 months
Green or wax beans 8 months

For a freezer full of salmon from a fishing trip, that 2-month line is the one to write on the label.

One habit worth keeping

If I could pass on one freezer habit, it's a marker and a roll of masking tape kept on top of the freezer. A label that needs a trip to the kitchen drawer tends not to get written.

Is it better to keep a freezer full or empty?

A full freezer holds up better in a power outage, while an overstuffed one works harder every other day. HealthLink BC says a full freezer will keep food frozen for up to 2 days without power. Amana's manual says a full freezer stays cold longer than a partly filled one. Danby rates its 10 cu. ft. chest for 48 hours when loaded 3/4 full. I'd plan around HealthLink BC's 2 days and keep the lid shut.

Natural Resources Canada (NRCan) warns that an overfilled freezer overworks its cooling system, and Frigidaire says overloading makes the compressor run longer. No maker or NRCan page I read says a fuller freezer uses less power. The Frigidaire 20 cu. ft. chest is rated at 361 kWh a year. At BC Hydro's 11.87 and 14.08 cents per kWh, that's about $43 to $51 a year. NRCan says manual-defrost freezers use half the energy of automatic ones, though they have to be defrosted periodically.

Where freezer organization goes wrong, starting with placement

Where not to put a freezer?

Keep a freezer off the wall, away from heat and inside its temperature rating. NRCan asks for at least 5 to 7 cm (2 to 3 in.) from the wall. Frigidaire's chest guide wants 7.87 inches (200 mm) at the sides and back, and its upright guide 4 inches (101 mm) all round. Both keep it away from heat sources such as direct sun, heating ducts or a range. For an unheated Island garage, Frigidaire rates its convertible chests from 0°F to 110°F, and Danby's chest listings give 0 to 110°F (-17 to 43°C). Without a garage-ready rating, I'd keep a freezer indoors. Wine coolers have stricter rules, covered in where a wine cooler can live.

Inside, the sorting comes undone with bins over the vents, foil liners, a big load of fresh food at once (Danby advises against it) and packages left unlabelled. Danby lists a 5-year parts and labour warranty with in-home service on its chest freezers, and how Merit backs a maker's warranty has its own guide.
