What temperature should a fridge be? 4 °C, the freezer at -18 °C, and how to check yours

Whirlpool WRS312SNH side-by-side refrigerator with electronic temperature controls - Merit Home Furniture

The right temperature for a fridge is 4 °C (40 °F) or colder, by Health Canada's figure, with the freezer at -18 °C (0 °F) or colder. Those are the numbers I'd hold any fridge to, new or old, and a thermometer tells you more about them than the dial does.

The temperature danger zone is the band between 4 °C (40 °F) and 60 °C (140 °F), where Health Canada says bacteria can grow quickly. A fridge's job is to keep food under the bottom of that band. Cooking has to take food past the top of it, and a temperature probe in the meat shows when it has. At Merit Home Furniture, the fridges and freezers on our site are the cold end of our appliance range. They're carried at our Campbell River and Port Alberni stores or come in as special orders. Every one of them can be checked against those two numbers. On Vancouver Island, where a winter windstorm can cut the power for hours, the real number in each compartment also decides what's safe to keep afterwards.

What temperature should a fridge be, in Celsius and Fahrenheit?

A fridge should read 4 °C (40 °F) or lower, by Health Canada's safe food storage page, and the freezer -18 °C (0 °F) or lower. Both are ceilings. Colder is fine in the fridge as long as food isn't freezing, and LG and Samsung both aim a little under the line.

LG's Canadian support page says its refrigerators come set to 3°C (37°F) for the fridge and -18°C (0°F) for the freezer. Samsung Canada recommends 3 °C (38 °F) in the fridge and -19 °C (-2 °F) in the freezer. The two makers round the same 3 degrees differently in Fahrenheit, which is why fridge charts never quite agree.

Reading Celsius Fahrenheit
Fridge, Health Canada 4 °C or lower 40 °F or lower
Freezer, Health Canada -18 °C or lower 0 °F or lower
Danger zone 4 °C to 60 °C 40 °F to 140 °F
LG fridge, as shipped 3 °C 37 °F
Samsung fridge 3 °C 38 °F
Samsung freezer -19 °C -2 °F

Is it safe to keep a refrigerator at 43 degrees?

A refrigerator at 43 °F is about 6 °C, above Health Canada's ceiling and inside the danger zone. I'd turn the control one step colder and check again a day later. A thermometer reading of 6 or 7 in Celsius calls for the same fix. A 6 or 7 on a numbered dial is another matter.

What temperature should a fridge be set at on a 1 to 5, 1 to 7 or 1 to 9 dial?

A fridge dial number is a step on a scale, never a temperature. The right setting is whichever step keeps a thermometer at 4 °C (40 °F) or a little under. Danby's manual for its DCR044B1 compact fridges, which we list in white, says higher numbers are the coldest setting and lower numbers the warmest. Its "0" turns the cooling off.

Makers don't all count the same way. Whirlpool's quick start guide for its WRS312SNH side-by-side uses snowflakes, from one lit for less cold up to all lit for coldest. It says the controls leave the factory at the mid-settings. Samsung treats three lit bars as standard on its bar-display models. Frigidaire Canada notes that on some models a fridge control at "0" stops the compressor while the light stays on.

So a 4 on one brand and a 4 on another can be far apart. I'd start in the middle of whatever scale the fridge has and let a thermometer decide the rest.

Dial and slider fridge temperature controls

A numbered knob, a slider or a row of snowflakes moves the thermostat a step at a time. Which end is colder is the maker's choice, so the manual is worth a look first. On a Frigidaire top-freezer model, turning the fridge control changes the freezer temperature too.

Digital fridge temperature controls

A digital panel shows a set temperature and usually moves one degree at a time. That number is a target. Samsung says the display can take up to 4 hours to update after a change, and the air inside takes longer.

How to check fridge temperature with a thermometer

Checking fridge temperature takes an appliance thermometer and about a day. Health Canada's emergency food safety page asks for a refrigerator thermometer in the fridge and a freezer thermometer in the freezer. The panel shows the setting, and the thermometer shows what the food is sitting in.

  1. Put it in the middle. Stand it on a middle shelf, away from the door and the back wall. In the freezer, tuck it between frozen packages.
  2. Read it before breakfast. After a night with the door shut, the reading shows the fridge at rest.
  3. Change one step at a time. Above 4 °C (40 °F), turn the fridge one step colder, and the freezer likewise above -18 °C (0 °F). Whirlpool's guide says a colder than recommended setting won't cool anything faster.
  4. Wait a full day. Frigidaire Canada, LG and Whirlpool all ask for 24 hours between adjustments. Samsung says the inside can take up to 28 hours to settle with the doors closed.

Why put a penny in the freezer?

The penny trick checks for a power cut while you're away. Freeze a cup of water, set a coin on top and leave it in the freezer. A coin found at the bottom means the ice melted and froze again. Island Health makes the point in its outage sheet that a fridge or freezer can pass 4 °C during a cut and cool again afterwards. A freezer thermometer gives you an actual number.

What temperature should a fridge be at on the door, the shelves and in the crisper?

Every part of a fridge should sit at 4 °C (40 °F) or below, but the parts behave differently. The door warms each time it swings open. Get Cracking, the Egg Farmers of Canada site, keeps eggs in the main compartment, since in the door "temperatures fluctuate each time the door opens". I'd keep milk on a shelf for the same reason and organize the fridge door around condiments and drinks.

Health Canada asks for raw meat, poultry, fish and seafood in sealed containers or plastic bags on the bottom shelf, so juices can't drip onto other food. Crisper drawers hold produce, and many have a humidity control, like the crispers on the Whirlpool WRS312SNH. Frigidaire Canada asks owners not to block the vents with food, since a fan moves the cold air around.

Health Canada's chart gives these keeping times for leftovers. It says the fridge times are for safety and the freezer times are for quality:

Leftover Fridge Freezer
Cooked meat, stews, egg or vegetable dishes 3 to 4 days 2 to 3 months
Cooked poultry and fish 3 to 4 days 4 to 6 months
Soups 2 to 3 days 4 months

Signs a fridge is running too warm or too cold

A fridge running warm shows it in milk that sours before its date and leftovers that turn early. A fridge running cold freezes lettuce and puts ice in the milk. Danby's manual says the temperature inside varies with the room, how full the fridge is and how often the door opens. A fridge that held 3 °C in March may creep up in a hot July kitchen, so a summer check is worth doing.

How do you increase fridge temperature?

To increase fridge temperature, turn the control one step warmer and wait a day. On the Danby compacts that's a lower number, on the Whirlpool one snowflake fewer, and on a digital panel one degree up. A fridge that freezes food at a middle setting may have another fault, which is a question for the maker's service line.

Fridge freezer temperature: -18 °C, and whether a freezer can be too cold

A freezer should hold -18 °C (0 °F) or colder, whether it's the top of a fridge, an upright or a chest. Health Canada sets a ceiling and no floor, so for food safety a freezer can't really be too cold. Samsung's own recommendation sits a degree lower, at -19 °C (-2 °F). For texture it can be: to soften ice cream, Samsung says to keep the freezer no colder than -18 °C. Garden vegetables hold their texture better when you blanch them before freezing.

Ice cream is the easy tell. Whirlpool's guide says the controls are right when milk or juice is as cold as you like and ice cream is firm. Soft ice cream points to a warm freezer or a door that isn't sealing. On a manual-defrost model, Danby's DCR044B1 manual says to defrost once the ice reaches 6 mm (1/4") thick.

Fridge and freezer temperatures when an Island storm cuts the power

An unopened fridge keeps food cold for about 4 hours in a power outage, by Health Canada and HealthLink BC. A full freezer keeps food frozen for about 48 hours, and a half-full one for about 24 hours. Island Health's sheet gives up to 2 days for a full chest freezer. HealthLink BC asks you to note when the power went out, and BC's emergency management blog points to the BC Hydro outage map for updates.

  • Keep both doors closed.
  • For a long outage, Health Canada suggests storing food with a friend or relative who has power.
  • Don't set frozen food outside, even in winter. Health Canada warns the sun can thaw it on a very cold day.
  • Run a gas generator outdoors only, away from windows, as the BC government warns.

Once the power is back, Health Canada says food with ice crystals, or that still feels refrigerator-cold, can be refrozen. Food left at room temperature for 2 or more hours goes in the garbage. Past those 4, 24 and 48 hour marks, HealthLink BC says to throw out all perishable food in the appliance. Both sources sum it up the same way: when in doubt, throw it out.

To clean up after a long outage, HealthLink BC has you wash the appliance with warm, soapy water. Then disinfect with 1 teaspoon of unscented household bleach per 3 cups water, and rinse. Restock only once the fridge is back to 4 °C and the freezer to -18 °C. If anyone feels unwell after eating food from a fridge that lost power, call a doctor or HealthLink BC at 8-1-1. Deaf and hard of hearing callers can reach HealthLink BC on 7-1-1.

Fridges and freezers on Merit's listings, and what they say about temperature

Merit lists 390 refrigerators on its site, as read on November 1, 2026. Of those, 126 are stocked at our Campbell River or Port Alberni store, and the rest are special orders. These listings name their controls, an alarm, a garage rating or an outage figure. Prices are before applicable taxes.

Listing What it says about temperature Store and price

Frigidaire FRAE2136AW garage-ready upright refrigerator in white, with an external digital display - Merit Home Furniture

Garage ready means the maker rates the unit for an unheated space, within the range on its listing. A garage that drops below 38 F on a winter night is outside Frigidaire's rating for those two fridges. The Danby chest freezer's listing goes down to 0 F. In a garage, the alarm is the feature I'd look at first, since nobody hears a freezer warming up out there. Merit's full ranges are in the full-size fridges we list, the chest and upright freezers and the compact fridges.

Where a setting or a thermometer won't fix the fridge temperature

  • The fridge won't reach 4 °C with the control turned colder. HealthLink BC says an appliance that can't hold 4 °C, or -18 °C in a freezer, isn't safe to use. It points you to a professional appliance technician, and how an appliance claim runs through the maker and through Merit is in our warranty guide.
  • It's a Danby. Danby's manual says only an authorized service depot may repair it, and a unit 100 km or more from one has to be taken in. How a Danby warranty claim gets started is set out in our Silhouette guide.
  • It's a wine cooler. Those hold wine at cellar and serving temperatures, warmer than food needs, and wine cooler temperatures have a guide of their own.
  • The garage or shed falls outside the listing's rated range.
  • The appliance is damaged, or a fire left smoke or soot in the house. HealthLink BC asks for a technician's check before using it.

Asking about a fridge or freezer at our Campbell River and Port Alberni stores

Merit's fridge and freezer listings name two stores. The Campbell River store is at 1300 A Homewood Rd, and the Port Alberni store at 2935 Third Ave. Duncan, where I work, isn't carrying appliances going forward. For a fridge or freezer one of those stores lists, call that store.

Phone Port Alberni at (250) 724-6644 or Campbell River at (250) 286-0868

Special-order fridges name no store on their listing, and their pages give a call-to-order line instead. That line is the Duncan number.

Call the Duncan store, (250) 746-5527, for special orders

Store details are on the Campbell River page and the Port Alberni page, and the rest of our fridge, range and laundry writing sits on one page.

Michael Ruhr has worked in furniture since 2000 and co-owns Merit Home Furniture, where he works the floor in Duncan.
